Breakfast Rice Pudding

Ingredients:

  • 3 3/4 cups choice of milk
  • 1/2 cup short-grain rice, such as Arborio
  • 1/3 cup honey 
  • 1 teaspoon vanilla bean paste
  • 1 egg
  • 1 tsp nutmeg
  • Pinch of salt

Method:

  1. Bring 3 1/2 cups milk and the rice to a boil in a medium saucepan. Reduce heat, and simmer, stirring often, until rice is tender and liquid has been absorbed- about 20 to 25 minutes.
  2. Meanwhile, in a small bowl, whisk egg, honey, vanilla, nutmeg and salt until light and fluffy.
  3. Remove rice from heat. Stir in remaining 1/4 cup milk and slowly pour in the egg mixture. Let stand for 5 minutes. Drizzle with honey and other toppings of your choice.
